- Rendering Properly: Ensure you render the tallow correctly. Slow cooking at low temperatures helps to reduce the odour. Strain the liquid fat through cheesecloth or a fine mesh strainer to remove any impurities, which can contribute to unwanted smells. It is recommended that you cook it for 2 x 2 hours further cooking to remove the odour.
- Add Aromatics: While rendering, you can add aromatics such as garlic, onion, or herbs (like rosemary or thyme) to infuse the tallow with more pleasant scents. Remove these before storing.
- Use Vinegar: After rendering, you can mix a small amount of vinegar with the tallow and let it sit for a few hours before straining it again. The vinegar can help neutralize odours.
- Baking Soda: Incorporate baking soda into the tallow when it’s still warm. Let it sit for a few hours before straining. Baking soda is effective at absorbing odours.
- Store Properly: Make sure to store tallow in an airtight container in a cool, dark place. Exposure to air and light can intensify odours over time.
- Refrigeration: Keeping the tallow in the refrigerator can help minimize the odour and extend its shelf life.
